I am comparing two itineraries and one of them connects through O’Hare with a longer stop.

The appeal is huge airline coverage plus useful for transatlantic routing. The hesitation is weather delays.

Would you intentionally route through Chicago if the total trip time was a bit longer but the layover quality looked much better?

I would absolutely choose ORD on purpose if the airport quality meaningfully lowers the chance of a chaotic connection day.

The best itinerary is not always the shortest one. Sometimes the calmer hub is worth far more than the saved hour on paper.

That said, if weather delays is tied to the season or the exact bank of flights you are using, I would model that before committing.
